produce 2- cousa

Curlyalicia here! I haven't really been committed to posting a lot but here is produce 2! cousa!

As mentioned before, I am a produce clerk in a speciality produce/grocery store.

Cousa is a staple in Middle Eastern cuisine. A lot of customers who buy this veggie are picky on quality and there are always ethical dilemmas as to whether to actually reduce this veggie as even top quality cousa is seen as "bad". But that's a different story!

Pictured is how cousa looks when Middle Eastern customers stuff them with meat. The texture of the cousa when cooked is similar to a stuffed bell pepper.

Anyways!

Cousa is a type of zucchini that is very popular in Middle Eastern dishes, esp. Lebanese dishes. It is also known as grey squash or Lebanese zucchini because it is very popular over in the Middle East. It has a different water density from other zukes so it gets tender faster than even yellow zukes. It can be baked stuffed with meat but on a pizza it falls apart as I had a rep. from the local mall pizza place that would buy zukes from us but she said cousa mushes up on the pizza and doesn't look pleasant.

You can also sautee them like normal zukes! I tried this because i love soft sauteed zukes and it was yummy! I slightly glazed mine with a dash of honey for extra flavour!
